Sweet & Sour Fish









Sweet & Sour Fish is an old time favourite!! who doesn't like it..... :) and it so easy to cook too, i think anyone can cook this dish too..anyway, enjoy my recipe. as simple as ABC...

INGREDIENTS
600g fish fillet
1/2 pc green capsicum
1/2 pc red capsicum
1pc onion medium size
chopped garlic
MARINATE
1 tsp light soya sauce
1 tsp sesame oil
dash of pepper
dash of chicken stock
salt
2 egg white
corn flour/wheat flour
SAUCE
3-4 tbsp chili sauce
5 tbsp tomato sauce
1/2 tsp vinegar
1 tbsp sesame oil
2-3 tbsp brown sugar
salt to taste
1 tsp chicken stock
1 tsp light soya sauce
corn flour/wheat flour
water
METHOD
* cut fish fillet into a cube size, cut red/green capsicum, cut onion, chop garlic and put aside.
* prepre sauce into bowl and put aside.
* marinate fish fillet for 30 minutes and coat well with corn/wheat flour.
* heat up oil for deep-frying. coat fish fillet with corn/wheat flour again and deep-fried into hot oil until golden brown dish up and drain.
* heat up wok, add in 1tbsp of oil saute chopped garlic until frangrance add in onion mix well, add in red & green capsicums stir and mix well until aromatic. add in sauce stir and mix, slow down fire, stir sauce till thicken. taste and add sauces amount if you would like to do so. then add in fried fish fillet into sauce, mix well and dish up and served hot.

Steamed Garoupa











This is another simple and home cooking that anyone can cook. Its simply delicious, healthy and its our parent old time favourite. since our friend gave us some small little garoupa, i have only one thing in mind is to steamed them as healthy as can be.


INGREDIENTS
3 medium size garoupa/ 1 whole garoupa or any fish
1 stalk of spring onion cut
little coriander leaves
fresh mushroom
fresh ginger sliced
garlic chopped

STOCK
1 tbsp light soya sauce
1 tbsp sesame oil
1 tbsp chicken stock
salt
dash of pepper
water

METHOD
* clean fish put aside on plate.
* Prepare wok to steamed, put in hot water to wok cover lid and let it boil.
* add chopped ginger inside fish and outside and sprinkle garlic on top.
* pour in stock into fish and sprinkle fresh mushroom on top ( be careful don't let mushroom soak all the stock away ) and let it steam for 5 mins or so and add in spring onion and coriander leaves and continue steam for another few mins depending on your fish size.
* served hot.
NOTE : you can stir-fried chopped garlic till golden brown to pour on fish when its cooked with little hot oil.

Udang Sambal with Petai









Petai

INGREDIENTS
1/2kg medium prawns
petai
asam jawa/tamarind juice

BLEND INGREDIENTS
1 big onion
3 shallots
3 onion
3-4 dry chilies ( soak in hot water and cut )
1 pc fresh tomato cut

SEASONING
salt
sugar

METHOD
* wash prawns, discard all heads and shells but left only the tails.
* clean petai put aside.
* heat wok, add in 1 cup of oil to deep-fried prawns till brown/cooked, put aside.
* heat wok, put in blended ingredients stir till aromatic. Add in tamarind juice mix well and seasoning to taste.
* finally add in petai stir for a minute to reduce the bitterness and add in prawns. stir to mix well and served hot.

NOTE : if you prefer petai not too cook and love the bitterness, could add in later after the prawns.

Butter Fish Fillets Recipe

who knew this song......this song just right for this dish! my " BUTTER FISH " its so simple, so easy and its simply fresh and delicious, you will just fall in love with it!!.....yum yum.....from the look to the smell and finally to the taste....
I have been cooking several time with my version of Butter Prawns, but for Butter Fish, its definately my first time, well....it seems like nothing much different with the prawns, its just that easy. my mother in law is definately the luckiest person to try first, and its her 1st visits to see us and her grandson my little boy, all the way from Jakarta, so i have to show some skill here. and of cos she loves my cooking as usual and my husband too. enjoy everyone! Here is the recipe

INGREDIENTS
1 cup of oil for deep-frying
500g fish fillet, sliced
4-5 egg yorks
100g unsalted butter/butter
3 clove garlic finely choppeed
curry leaves
5-6 chili padi chopped
MARINADE FISH FILLET
1 or 2 egg white
salt to taste
1/4 sesame seed oil
1 tsp light soya sauce
pepper
corn flour/wheat flour coating fish

SEASONING
salt
sugar
chicken stock

METHOD
* combined fish fillet with marinade afor 30 minutes or so.
* Heat up oil for deep-frying. coat fish fillet with corn/wheat flour again and deep-fried till golden brown dish up and drain.
* Heat up wok, melt butter with low heat and put in chopped garlic. gently stir-in egg york to wok keep stiring during pouring of egg york until it form into very fine shreds. add in curry leaves, chili padi, seasoning and mix well.
* Lastly add in fish fillet mix well and dish up. Served hot.
