Buttermilk Chicken





Ingredients:-
2 Chicken Breast, Slice
Garlic, finely slice
Butter
Curry Leaves
Chili cut

Marinate Chicken :-
Salt & Pepper
Dash Light soya sauce
Sesame oil
Egg white
Corn Flour

Sauce:
Evaporated Milk
Salt, Sugar & chicen granules to taste


Curry Laksa Mee

30.10.2010 - BRUNEI.  To make good bowl of LAKSA mee soup is actually not that difficult, but by just reading and looking at the recipe and ingredients, looks much more complicated and loads of work.

For my laksa recipe, sure gives no worries and its very easy to handle, remember the only thing that you need to cook is the LAKSA SOUP! nothing else. Follow my recipe step by step, you will find it so much easier than it sounds.

I am extremely falling in love with my super rich and thick Curry Laksa Noodle!! It was so damn good!! How could i not to cook this earlier.. it was super easy and cooking my very first Laksa with flying colours!  i think the best part is no need to fuss and busy with making laksa paste from scratch.  

Let me introduce you this paste, I used Nyonya Brand Curry Laksa Paste.  It was so good!! I won't ever change any brand for making my laksa noodle in the further not other than Nyonya brand. Love this paste. taste super good.  Please try this paste if you can get one.

Another interesting thing that i would love to share is that, LAKSA LEAVES list of names. Laksa Leaves is a kind of Herb or plant with a strong smelly leaves, used as a flavouring. that is a must in making a bowl of good Laksa or asam cooking method. In Malaysia, they called it "Daun Kesum" in malay language or probably you can see sometimes its name as "Laksa Leaves" too in english at the supermarket.

Where in Brunei supermarket, it name can be seen on the tag as "Laksa Leaves" and in Singapore or Vietnam recognized as the "Vietnamese Leaves". Just one herb has 3 different names from different countries. So don't confuse yourself, its just one type of Herb that has different name.


INGREDIENTS
Yellow noodle/rice noodle
Fresh prawns medium size

INGREDIENTS FOR SPCIES TO BE BLENDED
5 Fresh eye bird chili
5-6 shallots
5-6 garlic
thumb size ginger peel & cut
thumb size gelaga

7-8 candlenuts, pound
1 lemongrass
corriander powder
chili powder
tumeric powder
1 tsp belachan
1 pkt Laksa paste ( nyonya brand )
2 pkt coconut milk
sugar, salt & chicken granules to taste
1pkt taufu pok
1 bunch Laksa Leaves /Vietnamese Leaves /Daun Kesum


GRANISH INGREDIENTS
cooked prawns/shredded chicken/fish cake
2 hard boiled egg
cucumber, julienne
bird eye chili
beansprout

Method:-

Make Prawn Stock, boil water in Pot, In fresh medium prawns with shell. cook for 15mins until stock turn red.  discard prawns keep prawn stock boiling.   Discard prawn shells and keep prawn aside for garnishing.

In a blender, blend all spices, put aside

Head wok, put in lemongrass, corriander powder, chili powder, tumeric powder, stir well, add in blended spices mix well.

Mix in 1 pkt of laksa paste and mix well with spices then in 3 pkt of coconut milk, add sugar, salt and chicken granules to taste and add in to the hot prawn stock. stir well. keep it boiling medium fire and lastly add in taufu pok.  cook for another 10mins or till boil.

Finally when everything is cooked, add in laksa leave a quick stir and turn off heat.

Served with Yellow noodle or mee hoon. garnish with  cooked prawns/shredded chicken/fish cake
hard boiled egg, cucumber, julienne bird eye chili, beansprout and sprinkle chopped spring onion.

Add more laksa leave if you wanted to.

Hong Kong Egg Tart Recipe

25.04.2013 - I love egg tarts! and so as my little one.  I find making egg tart as easy as pie. so love to share this recipe with all of u who loves egg tart.  :)



Enjoy Baking!

Ingredients for Pastry
140g butter ( room temperature, cut into small pcs )
200g plain flour
70g icing sugar
1/2 egg or 1 small egg

Ingredients for egg fillings
140g castor sugar
300ml water
80ml full cream evaporated milk ( do not use fresh milk or whole milk, the result wont be the same )
4 eggs

Method:-

1) mix in all pastry ingredients in a mixing bowl.  mixed and press butter with hand or with a pastry cutter to mix. ( but i prefer to use both hands to do the magic! ) after mixed well and

2)  Knead!

3) spread some flour on the working table, knead for about 10mins until everything is mixed and refrigerate for 20mins until it is firm in a workable stage. ( Do not need to refrigerate your dough if is already at the workable stage )

4) Ingredients for Egg filling.  use a sauce pan, pour in water and sugar ( no need to stir ) let it melt down into water syrup and leave sugar syrup to cool. set aside.

5) When the dough is ready, knead it again for one minute and into a long shape, cut the dough into an equal size, make a small round ball to mould the pastry dough easily.

6) take one small round dough, ( keep the tart tin on the table when you mould the parstry into the mould ) lightly press down the pastry and bottom deep with some flour and place the pastry into the mould.

7) Press with your two thumbs, use your index fingers to guide your thumbs and keep the edges nice.  The edge should be slightly higher than the tin. When all done, but aside, it should be 12 egg tarts.

8) Now back to the sugar syrup, after sugar syrup cooled down completely.  Add in milk and eggs into the sugar water and whisk until combine. don't too over beat the egg or it will form bubble.

9) Shift the egg filling to a clean jur or bowl and pour egg filling into the tarts.

10) bake 200c for 15 to 20 mins.  ( Depending on your oven, if ur egg tarts are not cook, u can add more minutes to bake until its done. )

11) Egg tart is ready when the toothpick could hold itself.

26.05.2011 @ Thien Thien Chicken Rice, Brunei. The famous silky soft and smooth steamed chicken that just melt in your mouth. Thien Thien only offers steamed instead of deep-fried/roasted chicken. It is greatly known for its incredibly Steamed Chicken anyway, so people will not be fussing looking for the roasted type. in the other hand, their Laksa and Kolomee and wellknown to many too. The restaurant is concentrate only selling these few items only. People who go there knows exactly what they want to eat, surely go for the chicken and 2ndly for the laksa.

The service of food is quick, if you're so hungry and couldn't wait for more longer, this is the place that you should be thinking of, quick and fast deliver to your table!! I can guarantee you that the food will not be disappointed.

People who comes to brunei, wouldn't want to miss this silky soft steamed chicken, it is officially the Brunei food that you should try.

I have been eating thien thien chicken rice 10 over years and i haven't get bore with that. i would miss the chicken rice sometimes if too long i don't have it.. :) by the way, i have been to the thien thien in Kota Kinabalu, Sabah. It was run by the same owner, but however, since im a loyal customer of Thien Thien, know so well with the taste and smell. i find that the chicken wasn't as good as it in Brunei, the taste totally different, as well as the consistency of the chicken, rice quality, smell and most of all the taste. So i still prefer back to Brunei for a plate of good Thien Thien Chicken Rice.

Dinner @ Muti'ah Restaurant, Brunei














05.05.2011 @ Muti'ah Restaurant, Kiulap. Brunei. $5.00 buffet anyone?! so shocking cheap!! We never know $5.00 buffet exist in town, in fact there are 4 restaurants located in the same block that offers the same price for dinner, well except for Aiko Jpn Rest. buffet cost $6.00, a dollar more.

When we walk past that block, we saw all 4 restaurants were almost fully occupied with big and small families alike. I have no doubt that it must be the bruneians malay big family favourite eating place. So we just went into one of the 4 restaurants. We thought of trying Muti'ah Restaurant first and the rest well be some other day. Attractive price with quiet a lot of variety, well i can say that food served worth of $5.00, so no complains.

Who wish to have a quick meal like us, or looking for value for money eating out or would like to dine with big big family or have small function, here might be the right place for you.

Address : 1st unit, same block with Aiko Sushi, Kiulap or a building that behind fitness zone kiulap.

Lunch @ Amanah Harith, Jerudong Brunei










17.04.2011 @ Restaurant Amanah Harith, Jerudong. Brunei. Back in 10 years ago, this is the place where me and my colleagues love to walked here for lunch from our office nearby. I remembered this restaurant was very new at that time, it always neat, tidy and cleaned. Back then, not much customers recognize this humble little restaurant but however, we were maybe the only loyal customers who loves their food . we were saying that sooner or later this restaurant gonna be as famous as other restaurant in town, as we like the consistency of the food and variety offers on the menu.

So...yes, we really prove ourselves right!! i can see the difference from now and then. People and local magazines are recognizing this place for good food and of cos by the Bruneians with its Sunday Lunch Buffet, functions, Catering and other buffet offers during the Ramadhan month. Especially with big families love to dine here as the restaurant has an ample parking space and restaurant with hug round tables offers almost for big families alike.

At this very moment, the most attractive offer they have is the Sunday Brunch/Lunch Buffet at only $7.00 per person. Available every Sunday & Public Holiday only. We love to dine here once or twice a month no more or less. I love their famous Johor Laksa & Rojak, I guess that's all i eat everytime.

There are some other famous dishes on the menu is a must try, the Malaysia Nasi Lemak & Mee Rebus, Nasi Ayam and some ready cooked dishes at the food counter for you to choose. Overall makan here is very much satisfying.

Bombay Palace Restaurant is one of the new kid on the block in Brunei. It is known to served 100% Authentic Delicious North Indian Cuisine. The dinner we ordered some mouth watering dishes. Chicken Tikka, Dal Tadka, Mutton Gravy, Chicken Seekh Kebab, Briyani Rice, Garlic Naan, Plain & Mango Lassi and joined us for dinner is Mr. Rishi Chadha known as "Babu" the owner, he quickly introduced us his famous delicacies the Butter Naan, Tandoori Naan, Chicken Malai Tikka and two more dishes that i don't get the names. All taste like nothing else in other indian restaurant that we had, the dishes with gravy are rich, thick and creamy.

According to Babu, he has been wanting to opened a restaurant of his own, it was the right time as he gets the right chef to run the kitchen. Bombay Palace is the only restaurant that offers varies Mutton dishes that other indian restaurant doesn't, and the most special of all are the herbs and spices used for cooking flew all the way from India.
