Avocada, Egg, Chicken Luncheon Meat & Cheddar Cheese Triple Decker Sandwich


AVOCADO, EGG, CHICKEN LUNCHEON MEAT & CHEDDAR CHEESE 
TRIPLE DECKER SANDWICH
INGREDIENTS
3 slices of white bread ( toasted )
1/2 ripe avocado
2 fried eggs 
2 slices of cheddar cheese
2 slices of fried luncheon meat
1 tomato ( slice )
Mayonnaise
Tomato sauce

METHOD
* Slice Avocado thinly and set aside.
* Spread Mayonnaise and tomato sauce on each side of the toasted bread. Set aside.
* Place 1 bread on a serving plate, place egg, slices of tomato and slices of avocado, top with 2nd toasted bread.  Add slices of fried luncheon meat and cheddar cheese, top with last piece of toasted bread.
* Served chilled or room temperature.
* Enjoy!

Butter Milk Buns

When I google Butter Milk Buns, google will show all kinds of different type of round buttermilk buns with butter milk coating.  My childhood Butter Milk Buns in Sabah doesn't look anything like that.  The only correct search google recognize is when i type " Sarawak Butter Milk Buns" it will appear exactly what im looking for.

Sarawak Butter Milk Buns is exactly the Sabah type of Butter Milk Buns, don't forget to mention the  Brunei Butter Milk Buns too looks, shape and taste the same either round or oblong shape. So basically i found that these 3 countries have the same buns, taste, look and shape. Probably i should called them the Borneo Butter Milk Buns instead of Sarawak Butter Milk Buns ...hehehe...

These buns are so good, I could really finish the whole batch in one time! too yummy! I have been making countless times, so far so good. i used the same recipe http://amirahwaznahku.blogspot.co.id/2013/11/butter-milk-buns.html 

I only changes i have made was the rising time, i reduced the total rising duration of 2 hours to just 30 minutes for the whole rising process!! can you imagine how much time i have save and it works just fined. I divided the dough to 7 portion oblong shape, fill and shape.  Rest for another 25-30 minutes before bake.  Bake at 180c 35 minutes until golden brown.

 so darn good!! yummmmmmm















Coconut Sweet Buns

Afternoon tea must have this buns. Oh..yeah! yummy! Every piece just reminded me my childhood days, mom love to buy this for me, i just love the sweetness of the coconut. Every bite is magic in my mouth. 


COCONUT SWEET BUNS
INGREDIENTS
500g Bread Flour
100g sugar
5g salt
11g yeast
30g melted butter or oil
1 whole egg
220g water
1 egg wash

COCONUT FILLING ( for 9 pcs ) 
125g freshly grated coconut
70g caster sugar
30g butter,softened
30g egg, lightly beaten
* Mix eveything in a bowl, set aside.

METHOD
* In a mixing bowl, mix all ingredients together. Beat to 7 minutes until a smooth dough.
* Transfer dough on working table, dust with flour, knead for a while.
* Cover dough with a towel, let it rise in double, around 30 minutes. 
* Any extra dough, can freeze in airtight container with a cling wrap.
* Take a portion of dough, round out 9 pcs of buns. Take 1 round dough flatten it, put coconut filling in the center, seal edges pinch tightly.  Flatten with a rolling pin to oblong shape, make 3 or 4 cuts at the folded end but do not cut right through to the end, use hand to pull it longer, twist dough pinch to seal the end. 
* Place buns on flour dusted pan.  Let rise for 15 mins until double. 
* When ready, brush with egg wash.
* Bake pre-heated 190c for 25 minutes or until golden brown.

Tuna Pizza

Here is the left over half portion dough from No Rise Quick & Easy Pizza Crust Recipe.  I make Tuna Pizza with this.  Top with lots of canned flaked tuna, black olives, capsicums, grated some Spanish cheeses and finish off with alot of cheddar cheese and 1/4 portion of mozzarella cheese.

PIZZA DOUGH/ CRUST
1pkt/ 11g dry yeast
1tsp sugar
1cup warm water
2 1/2 cups bread flour
2tbsp oil
1tsp salt

TOPPINGS OF YOUR DESIRE / SOME TOPPINGS IDEA:-
Base Sauce - Tomato sauce (purée) IS A MUST for base / pesto
Oil - Olive Oil
Dried Herbs - Italian Herbs / Italian Spices / Rosemary / Oregano / Tarragon / Basil / Sage 
Sauce - Smoke BBQ Sauce / Black Pepper Sauce 
Cheese - Mozzarella cheese / Provolone / Emmental / Colby / Parmesan / Chedder / Romano / Riccota
Black Olives
Meat - Italian sausage / meatball / burger patty / ham / pepperoni / chicken / prawns / beef  
Vegy - Chopped fresh basil / bell pepper / spinach / asparagus / artichokes / Mushroom / Onion
Fruit - Pineapple, thinly sliced
Seafood Canned - Anchovies / Sardines / Flaked Tuna 

METHOD :-
* Combine the warm water, yeast and sugar in a bowl. Set aside at a warm place for 10 minutes or until foamy. Stir in flour, salt and oil knead until a smooth dough with mixer.  Let it rest for 5 minutes.
* Turn dough into flour working table.  Roll it flat.
* Prepare a pan, grease base. Transfer dough on center pan, stretch dough with thumbs and fingers to the edges.  When it is done, use a fork to poke some holes.
* Spread tomato paste dough, drizzle olive oil, follow by a handful of shredded mozzarella cheese and other topping of your desire and don't forget to sprinkle generous amount of your favourite italian herbs and drizzle more olive oil, top with more cheeses before bake.
*  Bake at 230c for 20-25 minutes until golden brown.
* Towards 5 minutes before finishing, remove pizza and sprinkle more cheeses and continue bake until finish.









 OOhhh...yeah!! the tuna taste so delicious!!

NO Rise Quick & Easy Pizza Crust Recipe

Believe me, now you can prepare yourself a decent and delicious pizza crust at home in no time ~


PIZZA DOUGH/ CRUST

The best way to stretch your dough is to use your fingers, stretch from the center to edges evenly.

 Spread with tomato paste

 sprinkle with generous mozzarella cheese

 top with your favourite toppings. Sprinkle some spices and mozzarella cheese on top, lastly drizzle with olive oil before bake

 Done, i sprinkle more cheeses 5 minutes before baking time finish. ( My cheese definitely not enough, i was actually running out of cheese, so thats all i have left to sprinkle on top )

Basic Bread Dough for variety of Sweet Buns

31.12.2014 - This is one of very useful Basic Bread Dough with a large quantity that can use for variety of sweet buns.  Recipe adapted from Kenneth Goh basic-bread-dough-recipe-and-plum-blossom-sausage-buns-  please click link for recipe.

I used Basic Bread Dough Recipe to make "Buttermilk Buns", "Mini Sausage Buns" and "Coconut Sweet Buns".  For buttermilk filling, please refers to butter-milk-buns recipe.   I bake at 180c Pre-heated oven for 25mins or until golden brown.

This dough can make any sweet buns you desire like pizza, redbean buns, hamburger, sausage buns, any sweet bread, doughnuts or hot dog buns etc... as  mentioned on Kenneth's blog.




For Mini Sausage Buns
4 sausages ( cut into half )
1 egg ( egg wash )
Sesame Seeds
Basic Bread dough

Use the same dough to roll up the sausage in any shape you desire, brush egg wash, sprinkle sesame seeds.  let it rest for 15mins and bake at  Pre-heated oven 190c for 35 minutes or until bread turn golden brown.


For Coconut Filling ( for 8 pcs ) 
125g freshly grated coconut
70g caster sugar
30g butter,softened
30g egg, lightly beaten

1. Mix everything together. Divide into 8 equal portions and keep in the fridge to use when needed.
2. Roll out dough in to disc shape, take one portion of filling and seal tightly and flatten it with the rolling pin and shape the buns using any method you desire.
4. Let rise for 15mins, lightly covered, until double in size on a lightly greased tray. When ready, brush with egg wash.
5. Bake in preheated 190°C oven for about 25 minutes or until golden brown.
