Vanilla Nutella Ice Cream

Have left about a cup of whipping cream from my birthday cake making. So I make Vanilla Nutella Ice Cream. Recipe is so super easy.



VANILLA NUTELLA ICE CREAM
INGREDIENTS
1 cup Whipping Cream
2-3tbsp Sweetened Condensed Milk
1tsp Vanilla
Nutella Spread

METHOD
* Pour sweetened condensed milk in a bowl, mix in Vanilla.
*Then whisk 1 cup of heavy cream until stiff. Transfer milk into whipped cream and spoon Nutella Spread to cream.
*Transfer batter into a container and cover with a plastic wrap. Then freeze minimum of 2 hours or overnight.

Mango Ice Cream

18.10.2013 - Batam.  I have a whole fat Mango taste so sour and i kept it in my fridge for almost 2 weeks!! duh!!!.....instead of throwing away, i decided to turn that monster into a charming prince...lol..

Here is the recipe, simply easy...

380g whole mango, discard mango seed puree with 1/2cup granulated sugar, put aside
1 & 1/2 cups whipping cream whisk till stiff with 1/3cup confectioner's sugar
Fold in mango puree into whipping cream gently till combine, do not over mixed.
Transfer into a air tight container, freeze for 6 hours and above to served.



Ooooh...so smooth and yum

Strawberry Yoghurt Ice Cream

06.10.2013 - Batam.  I make two ice cream at the same time, the Mango and Strawberry Ice Cream. This batch of strawberries really really damn sour, so i turn them into Ice Cream or else i will make Strawberry Jam.  For the Jam, i will do it in my upcoming exercise.  

Here is the Strawberry Yoghurt Ice Cream Recipe, steps by steps with picture provided to guide you for a better understanding.  Anyway, steps and ingredients all the same as Mango Ice Cream.   Happy Making!.

By far, this is my favourite!! super delicious!! smell so good and just delicious!! i will sure make this again whenever i have strawberries.

Nicely scoop just after 6 hours. Good to eat.


Ingredients:
200 gm. fresh strawberries
1/2 Cup granulated sugar (sweetness depends on how sweet the strawberries are,cut down sugar if the strawberries are very sweet)
1 cup whipping cream ( 200g )
1 tsp. strawberry emulco ( I didn't add this as it is not available in my kitchen pantry, you may add this if you want to just after Strawberry & Yoghurt Mixture into whipped cream before transfer to container )
125 gm. strawberry flavoured yoghurt  ( I used the whole cup fo E&V strawberry yoghurt instead of 100gm)

Method:

*Blend Strawberry Flesh and sugar together becomes puree.  Blend till granulated sugar has dissolve.
*With hand mixer whisk whip cream until stiff. ( whisk until stiff but do not over whisk )
*Mix Strawberry Yoghurt into Strawberry puree and fold in whipped cream.  Cover with a plastic wrap,
*Transfer to container and freeze for 6 hours or overnight.
*This is how i handle my frozen ice cream after a long overnight.  Remove from freezer 10mins before serve.
 4 ingredients Strawberry Ice Cream

 Blend strawberries & granulated sugar until smooth

Blend until a Strawberry Puree

 If you prefer a smoother yoghurt texture, you may use Yag Go instead of Fruits

 Mixed in Yoghurt into puree

 Stir until well combined

 Mixed Strawberry Puree & Yoghurt Mixture into Whipped Cream

 Mix until well combined

 If you wanna mix in Strawberry emulco, you could do it now before transfer to Container

Transfer to container  

 Cover with plastic wrap, freeze for 6 hours or overnight

 Here you have a lovely ice cream after 6 hours

 Smooth and delicious! Strawberry smells fantastic!

I was so surprise! so delicious Strawberry Ice Cream.  You can never have enough! Its little sour, sweet and the smell of strawberry just so lovely!! 

After 6 hours just perfect to eat.  But if you gonna eat this overnight the next day, this ice cream will be come frozen hard in the freezer.  Remove from freezer 10 - 20mins before served :) 

Mango Yoghurt Ice Cream

06.10.2013 - Batam.  Fridge stock up some big fat mango and strawberries. and its no really sweet. So im turning them into Ice Cream.

I found this recipe simply easy.  It was actually Mango "Yoghurt" Ice Cream ( or its not needed to be name "yoghurt" ice cream.  Is up to you if you want to be specificed ). I find that the yoghurt only plays little part in this recipe, so it doesn't matter to mention or not to mention.  :P

Originally, this recipe needed 300gm of mango, i over looked and used only 200gm instead of 300gm.  i did a study on the measurement too.  The recipe not complicated but each ingredients used GRAM on measurement, so i am not sure about using all ingredient in GRAM.  or perhaps later i might get the wrong measurement for whipping cream or yoghurt with gm.  I am so used to milk or cream with cups/ml.  So its hard for me to measure.  So need a little hard work to convert ingredients weight in a proper way.

All sorts of ingredients don't have the same weight such as Gram/Cup/oz/ml, they all contain different weight. So I have to be specific. Sometimes we can go very wrong with the measurement like all purpose flour and cornflour from gram to tbsp or cups. they can weight differently even though they are the same in flour form. so we have to be very careful with every ingredients.  So when i start measure my ingredients, i used 3 types of measurement to weight each ingredients, i used cup to ml and to gm, just to make sure all exact and for my knowledge weight from one another.

The recipe ingredient includes 1 tsp. strawberry emulco. I don't have that so i didn't add any.  If you want to add that you may go ahead to do so just right after the whipping cream was mix with the fruit & yoghurt mixture before transfer to a container.


Anyway, my Mango Yoghurt Ice Cream came out PERFECTLY Delicious!! So smooth and creamy!

I tasted my ice cream just after 4 hours freeze and texture was great! but the center still soft so i continue freeze up to 6 hours standard.  Its perfect to eat after 6 hours! I did many Homemade Ice Cream. Whenever i freeze too long or overnight.  The Ice Cream tend to be hard and icy. So i guess eating just after 6 hours was the PERFECT timing, while it was not too hard and just lovely and creamy!!

Here 's the recipe

Ingredients:

200g Mango Flesh
1/2 cup granulated sugar
1 cup Heavy Cream/ Whipping cream
100ml Mango Yoghurt straight from yoghurt cup

Method:

*Mix Mango Yoghurt into Mango puree and fold in whipped cream.  Cover with a plastic wrap,
*Transfer to container and freeze for 6 hours or overnight.

 There's only 4 ingredients you need to make this ice cream

 Mango Puree, Mango Flesh blend with sugar until very fine, make sure all sugar dissolved
100ml mango yoghurt ( if you bought a yoghurt that contain 125g ) just go ahead to used it all straight from yoghurt cup won't effect much of the taste and texture

 Mixed in Yoghurt to mango puree

Mixed well till combined.

Beat whipping cream until stiff 

 Fold in Mango Puree & Yoghurt mixture into whipping cream

 Mixed well until all combine, do not over mix/ break whipping cream

 ALl mixed well and ready to transfer to container

 In container

 Cover ice cream with plastic wrap and freeze to 6 hours and overnight.  
After 6 hours, Ice Cream just fantastic to consume.

 Smooth and Delicious Mango Ice Cream

After 6 hours just perfect to eat.  But if you gonna eat this overnight the next day, this ice cream will be come quite frozen hard in the freezer.  Remove from freezer 10 to 20 mins before serving.  :)

Oreo Ice Cream

19.09.2013 - I LOVE Oreo!! Below recipe is modified by my friend on our experiment. Came out great and yummy.

Ingredients
2 1/2 cups + 1tbsp Heavy Cream ( 2 1/4 cups + 6tbsp )
1/2 cups Sweetened Condensed Milk ( 3pkt of 42g SCM )
1/2tsp Vanilla Essence
7 Oreo cookies ( chopped )

Method :

Beat cream till peak, add in condensed milk and vanilla. mixed well and add in chopped oreo. and freeze to 6 hours or overnight.



Avocado Ice Cream

17.09.2013 - Batam.  I found one avocado in my fridge and some left over cream from making ice cream the previous day.  A quick finish up these two are to make avocado ice cream. They are heaven on earth! My hubby too loves it.  So ok, i give it a go.   There is no proper measurement, what an experiment.

The ice cream came out so delicious! it was a success.

However i still not 100% satisfy with the ice cream texture. I find it a little hard and like 5% crystallization. maybe i used too less sweetener. Well, i like ice cream less sweet. Gosh...perhaps i was wrong. It does affected the texture.

Ingredients:
1 whole avocado. puree with hand mixer/blender
vanilla essence
1 1/2 cups Heavy Cream  ( add another 1/2 cup makes more creamer )
1 pkt 42g Sweetened Condensed Milk ( if you like sweeter, u can add another 42g is = to 2tbsp + just almost a teaspoon full )

METHOD:-
* Puree avocado set aside
* Beat Heavy Cream till Peak but do not over beat whipped cream,cause it to curdle and separate, watery and lumpy! Please be careful with your whipping skill, cos i wasted my cream for the 2nd time...too excited and over whipped!! ( please do not throw away the over beat cream, its turning into butter, you can actually make butter and keep the buttermilk )
* After whipped the cream, add in vanilla essense, Sweetener & avocado puree, mixed well. don't over mixed cream. and Freeze for 6 hours or overnight.




Here are some tips for Making Homemade Ice Cream.


Now that everyone out there’s been churning up ice cream, I’ve been getting a certain amount of questions about homemade ice cream, which I’m going to answer here over the next several weeks.
I’m going to start with the number one question folks have been asking: Why does homemade ice cream gets harder than commercial ice cream in their freezer? And what can be done to prevent it?
While I do address this in The Perfect Scoop (pages 5 and 16), I thought I’d list some strategies here as well. I don’t necessarily follow these all the time, but thought I’d put them out for readers to ponder and use as they see fit.
Alcohol
Alcohol doesn’t freeze, which you know if you’re anything like me and keep a bottle of Zubróvka vodka chilled and ready in your freezer. You can add up to 3 tablespoons of 40 proof liquor to 1 quart (1 liter) of your frozen dessert mixture prior to churning. I use vodka if I don’t want the taste of the liquor to intrude on the flavor, but will switch to another liquor such as Grand Marnier or Armagnac to enhance the original flavor if it’s compatible.
If my mixture is fruit-based, I prefer to add kirsch, a liquor which enhances the taste of stone fruits, like peaches, plums, nectarines, as well as berries. Generally-speaking, I’ll add enough so the taste isn’t very present, often less than a tablespoon.
For sorbets and sherbets, a glug of Champagne, white wine or rosé is nice with fruit flavors. 1/2 cup (125 ml) can be added per quart (liter) of mixture prior to churning. Or if the recipe calls for cooking the fruit with water, substitute some dry or sweet white wine for a portion of the water; the amount will depend on how much of the wine you want to taste. (Most of the alcohol will cook out but enough will remain to keep your sorbet softer.)
Sugar
Like alcohol, sugar doesn’t freeze which is why you shouldn’t futz around with recipes and just reduce the sugar willy-nilly. Almost all frozen dessert recipes use white granulated sugar, however you can replace some or all of the sugar with another liquid sweetener, namely honey or light corn syrup.

Either one will give the ice cream a smoother, less-icy texture but the drawback is that honey has a taste that may not be compatible with your other flavors and corn syrup has its own detractors. Since I don’t eat many preprocessed foods or drink soda, where most of it lurks, I don’t worry adding some every now and then when called for.
In general, liquid sweeteners are sweeter than granulated sugar so you should use three-quarters for each part of granulated sugar. (ie, use 3/4 cup honey in place of 1 cup of sugar.) You can substitute all, or perhaps, just part for the sugar. Artificial sweeteners, like Splenda, I have no experience with so can’t advise. I suggest researching agave nectar, a natural sweetener, which is said to be suitable for diabetics. (You should check with your doctor if you have health concerns.)
Gelatin
You can soften gelatin in cold water, warm it to melt it, then add it to sorbet or sherbet mixtures prior to churning. 1 teaspoon of powdered gelatin is a general guideline per quart (liter) of mixture, although that can be doubled. Please note that this makes the recipe no longer suitable for vegans, vegetarians or folks who keep kosher.
Fat
Fat doesn’t freeze. If you don’t believe me, put a cup of olive oil or a blob of Crisco in the freezer and see what happens. (Butter will freeze since it’s roughly 18% water.) In many of my recipes, I don’t use boatloads of cream and instead replace it with whole milk with very satisfying results. Same with egg yolks. While it’s lots of fun to watch chefs dump tons of cream into whatever it is they’re making while the crowd cheers them on, it’s not necessarily how I (or most folks) actually cook at home these days.
So you can up the fat in your ice cream by substituting cream for milk or half-and-half in recipes. Even more effective, is that you can also add more egg yolks if making a custard-based ice cream, which will increase the creaminess due to their emulsifying properties. Most of my recipes used 5 or 6 yolks per quart (liter), but you can go up to 10 per quart (liter) if you’d like.
(Note: People also ask me about using non-fat or reduced-fat products. In my recipes, I indicate where low-fat products can be used without sacrificing the results. You could theoretically use non-fat products but your ice cream or frozen yogurt will be grainy and icy and most likely you won’t be thrilled with the results.)
Stabilizers
Some pastry chefs use stabilizers and ant-crystallization agents in their ice creams and sorbets to keep them smooth. Many are pectins and alginates are derived from seaweed or glucose. (There’s a forum on eGullet where these are discussed in depth.) I don’t have any experience using them as I prefer my frozen desserts with less-additives and don’t write recipes using ingredients that many people don’t have access too.
If you do want to experiment with them, stabilizers are available at L’Epicerieand Pastry Chef Central, and those companies can best advise about their use.
Your Machine
Almost all home machines churn at a much lower speed than commercial machines, which are designed to whip lots of air (called ‘overrun’) into the ice cream, as much as legally possible in some cases. Consequently your homemade ice cream will not have as much fluffiness to it like the stuff you buy in the supermarket.
My Cuisinart ICE-50 turns off automatically when the ice cream is done and I find during the last few minutes of churning is when the ice cream reaches its maximum volume and airiness. You may want to churn your ice cream as long as possible to get the maximum amount of air into it as well whatever machine you’re using.
The most powerful and fastest machine I’ve seen for home churning, which replicates a commercial machine, is the pricey KitchenAid Pro Line Frozen Dessert Maker.
Home Freezers
Home freezers are designed to keep things like ice cubes and peas really, really cold. Not necessarily ice cream or sorbets. You can either turn your freezers temperature up, or store your ice cream in the door, which is a bit warmer than the shelves (which is why you shouldn’t store milk in the door of the refrigerator either.)
My personal recommendation is to follow recipes as indicated and if the ice cream or sorbet is too firm, take the frozen mixture out of the freezer 5 to 10 minutes (or longer) prior to scooping and serving. If you’re having a dinner party, mid-way through the meal, transfer the ice cream to the refrigerator and it should be fine by the time it’s ready to serve.

3 Ingredients Chocolate Ice Cream

12.09.2013 - Batam.  We love Ice Cream.  Recently we have been eating quite alot of ice cream. So i thought of trying to make my own ice cream instead.

So i got this recipe simply easy. Just 3 ingredient No churn Chocolate Ice Cream by "Eugenie Kitchen". Credit all goes to her creation.  I always check on her recipes and watch her videos at Youtube.  She has been posted so many of her ice cream recipes during summer and i did not pay much attention of her recipes until i need one :P thanks to her for a wonderful ice cream recipe.

This recipe need no ice cream maker or machine and it is super easy! So for you who have no ice cream machine no need to worry how to make a quick, easy and delicious ice cream. Just follow this recipe and the next day or 6 hours later you will enjoy a lucious and rich creamy, and best of all NO Churn ice cream straight from your own kitchen without failing you!

Ingredients
½ cup + 2 tablespoons sweetened condensed milk (150ml)
3 tablespoons unsweetened cocoa powder * (45ml)
1 cup heavy cream (36%+ milk fat whipping cream) (240ml)
* Revised. Add 7 tablespoons like the video if you want dark brown color and don’t mind bitterness of cocoa powder.

Direction
*First, pour ½ cup and 2 tablespoons of sweetened condensed milk in a bowl and sift in 3 tablespoons of    cocoa powder. And stir until combined. And sift in remaining 4 tablespoons of cocoa powder and whisk until homogeneously mixed. It is pretty thick.
*Then whisk 1 cup of heavy cream until stiff.
*Transfer a whiskful of whipped cream into cocoa milk mixture and stir until well mixed. Doing this, the batter should be thinned out.
*Then pour cocoa milk mixture into whipped cream all at once and fold until combined. Be careful not to break whipped cream. This is a way of mixing thick batter into lighter mixture.
*Now transfer the batter into a container and cover with a plastic wrap. Then freeze for at least 6 hours or overnight.
