Smoked Chicken Sausage for Breakfast

03.10.2013 - Batam.  I bought a packet of huge giant smoked chicken sausage, Arab Saudi product.  Taste absolutely fantastic!! Sausage with toasted bread, fried egg, tomato slices and a muffin for another lovely morning! Wonderful! 




Avocado, Strawberries & Pancakes for Breakfast!

22.09.2013 - Batam.  To start your morning with a great breakfast is all you need.  I have fat juicy avocado, sweet & sour strawberries and 2 lovely pancakes for breakfast. What a bliss!!




Bell Pepper & Cheddar Cheese Breakfast Omelet

I was busy with my kid forgotton the omelet and end up eat burnt omelet 

Ingredients:
2 eggs
1/4 cup milk
2 tbsp butter
Salt and ground black pepper, to taste

Fillings:
2 tbsp Green Bell Pepper, finely diced
2 tbsp Red Bell Pepper, finely diced
2 tbsp Diced sauteed onion
1/4 cup shredded cheddar cheese


Preparation:

Whisk eggs, Cheddar Cheese, salt, black pepper together in a bowl.

Heat olive oil in a nonstick skillet over medium heat; cook and stir onion, bell pepper until tender, 2-3 minutes.  Pour in egg mixture; swirl pan around to evenly distribute egg mixture. Cook until egg is fully cooked and set in the middle, 5 to 10 minutes.

Some suggestions for breakfast omelet include:

Grated cheese
Sautéed mushrooms
Diced and sautéed onion
Chopped cooked bacon
Diced ham

Toast with fresh Tomato, Fried Egg & Fresh Strawberries



This is local strawberry that can easily get at the supermarket at a very reasonable price.  It is cost only Rp24.000  import strawberry can cost up to Rp150.000 .  This local strawberry can be sour some sweet. but mostly sour, so it is suitable for ice cream making, strawberry sauce making, i love the smell of strawberry, so i don't mind to eat them as it is even though it is sour and sweet. 

Scrambled Egg Recipe

Ingredients:-
2 slices of white bread
2 eggs
1/2 milk
2 slices of cheese
dash of salt & pepper

Method:-
* Toast 2 slices of bread to be ready on a dinner plate and place 2 slices of cheese on top of the bread.
* Crack 2 eggs in to a bowl, add in milk, salt & pepper mix well till combine.
* Heat none stick pan, pour in eggs mixture over low heat keep stirring till it scramble egg is form and dish up
* transfer to the bread on top of cheese slice. served.

24.07.2013 - Batam.  A meaty morning breakfast.  Chicken & Beef Germany Smoked Sausages, so delicious!! the taste just incredible! my son love it. And 2 toasted bread and half boiled egg to finished it off.  What an indulgence.

Stir-fried Beehoon for Breakfast


07.07.2013 - Batam.  Its my hubby birthday 07.07. So i fried him a birthday breakfast - stirfried beehoon.  This is such a delicious breakfast.  I love bee hoon. and this is the ideal breakfast for me too.

Plain Pancake


09.06.2013 - Batam.   Another morning, another pancake.  This is a plain pancake i made for my son, He loves to eat pancake with peanut butter!! You can use Vanilla Pancake recipe vanilla-pancake on my recent post for this plain pancake making.

Stir-fry Egg Noodle with fish cake


INGREDIENTS
2 pcs Fresh Egg Noodle
pak choi ( as u like, normally sawi is used )
fresh fish fillets
1 egg
2 cup oil to deep-fried
water to steamed

SEASONING
1 tbsp chicken granules
1 tbsp sugar
salt to taste
pepper to taste

METHOD
* Heat oil on wok to deep-fried egg noodle till golden brown / harden and aromatic, dish and drain.

* Heat wok, 2 tbsp cooking oil to wok, put in 1 egg and put in the fried egg noodle on top of the egg, add water just enough to cover half of the noodle and cover with lid let it steamed for 2 minutes.

* open lid, turn over to steamed the other side of the noodle again, add in seasoning and fish balls closed lid and let it steamed for a minute or so ( you can add more water if the noodle soak all water away while the noodle still hard ), open lid and mix well noodle and egg add in vegetables. stir and start frying the noodle till aromatic, served hot.


Prawn with Avocado & Mango Salad


INGREDIENTS:-
1 Handful baby lettuce or mix vegy
1 ripe Avocado
1/2 ripe yellow Mango
50g Prawns ~ remove shells and vine, season with some salt and pepper and put prawns in boiling water till cooked, dish and put in ice water for a few minutes, drained. Use whole prawn or cut prawn into cubes
**substitute prawns with crab meat or lobster if you prefer

Dressing
100g mango yoghurt
2 tsp Lemon juice
some sea salt and pepper

Method:
Combine all Dressing ingredients and set aside.
Scoop out avocado flesh and reserve the skins to be used later as salad bowls.
Diced avocado and mango. Add cooked prawns and mix well, then lastly add in dressing and toss well.
Serve in avocado bowls or if you're lazy, just serve all into a pretty serving bowl.


kitchen note: To prevent avocado turns brown quickly, squeeze lemon juice over the exposed flesh and cover with plastic wrap and place in the refrigerator before mixing with mango and prawns.

Stir-fried Ceylon Spinach with Crispy Garlic


Ingredients:-
100g Ceylon Spinah
5-6 big Garlic cloves, finely chopped, separate a teaspoon for stir-fried.

Seasoning:-
1tbsp Osyter sauce
Chicken granules & salt to taste
1/2 cup water
Cornstarch water for thickening

Method:-
1. Heat wok with oil, with a small fire, slowly sauteed finely chopped garlic until golden brown, set aside.

2. Heat wok with left over garlic oil, add the remaining tsp of chopped garlic sauteed till aromatic and add in Celyon Spinach stir fried quickly to let them 'shrink' evenly.  Add in seasoning mix well and just little bit about 3tbsp water mix well and add cornstarch water to thicken the sauce.

3. Dish up garnish with crispy golden fried garlic.  Serve with white rice.

Bread Pizza with Sardine with Black Olive & Melted Mozzarella

27.04.2013 - Batam.  I was craved for pizza.  But i wanna eat instantly, so i can't out this idea of using slices of white bread.  LOL..this is very simple recipe

Ingredients:-
Few slices of White Bread
1 can Sardine with tomato sauce
1/3 cup of pitted black olives, slice
1/2 cup of slices Mozzarella cheese

Method:-

* Pre-heat oven 180c
* Prepare baking tray with a layer of aluminium foil.
* Put 5 or 6 slices of white bread. use spoon or spatula spread sardine and tomato evenly on the bread and and as many slice of black olives as you desire. 
* Lastly put 4 slices of cheese on top. bake at 10 minutes, more or less until cheese melted. 
* Served hot.










Basic French Toast

09.04.2013 - Batam.  French toast is all time favourite for breakfast.  it is quick, ideal, delicious and so easy to prepare. 


Ingredients:

2 eggs
2 tbsp sugar, optional
dash salt
1 cup milk
5 slices white bread, you can cut into any shape you desire
cooking oil

butter
maple syrup or other syrup


Preparation:

Break eggs into bowl, beat lightly with a fork. Stir in sugar, salt, and milk.

Dip in few slices of breads into the egg mixture.  let slices soak up egg mixture for a few seconds, then carefully turn to coat the other side. Soak/coat only as many slices as you will be cooking at one time.

Over medium-low heat, heat pan with a thin layer of cooking oil.  Transfer bread slices pan, heating slowly until bottom is golden brown. Turn and brown the other side. Serve French toast hot with butter and syrup.

Hong Kong Egg Tarts II

12.03.2013 - Batam.  I was so desperate to make some egg tarts for my son but unfortunately i do not have evaporated milk. So i replace with fresh milk.  I used the same recipe of the Hong Kong Egg Tart i have posted on my blog. 

The baking time eventually end up more longer, because i find that the egg tarts were still wobble in the centre of the custard, and it still quite watery.  I let it bake longer and end up have a burn edges around the tarts.  

So i find that using fresh milk replace evaporated milk is not a good idea.  Fresh milk just didn't hold it together as firm as evaporated milk.  Anyway, when it was cooked, the custard was sunk in a little when it was cool and burnt edges.  Custard wasn't that firmed but the tarts still taste as good and edible.

Conclusion, tart is edible and looks good but if you are expecting a good firm egg custard, i recommend you to use evaporated milk.

This for sure is everyone's favourite dish! Bibimbap simply has everything you need in one bowl, eating 'em is easy too by mixing ...
