Ayam Goreng Kalasan

Ayam Goreng Kalasan, is one delicious fried chicken Indonesia cooking, dip in with homemade spicy sambal mix with warm steamed rice..and that mouth full of fresh kemangi herbs all blend in  together...oooh...yummilicious!


AYAM GORENG KALASAN
Bahan-bahan
3 paha atas ayam potong
10 siung bawang putih
2cm lengkuas
1 serai
4 lembar daun salam
6 sdm gula merah 
Air kelapa cukup utk diungkap
kaldu ayam
secukupnya gula dan garam
secukupnya minyak goreng

CARA:
* Cuci bersih ayam dan keringkan
* Disatukan semua bahan dlm wajan, masak, aduk, masuk air kelapa tua dan ungkap sampai kuah menyusut. Angkat dan disisikan. 
* Panaskan minyak agak banyak dan goreng ayam sampai kuning keemasan.
* Sajikan dengan lalapan dan nasi hangat.

Woku Ayam Manado


WOKU AYAM MANADO
setengah ekor ayam atau 3 paha atas 
1-2 tomat hijau sedang ( dipotong dadu ) 
garam dan gula
3 cabe hijau besar ( iris kasar ) sesuai dgn selera 
2 cabe hijau rawit ( iris kasar ) sesuai dgn selera 
3 cabe keriting

DAUN ( DIHIRIS KASAR )
3 daun pandan 
2 batang serai geprek  
3 daun jeruk 
2 genggam kemangi atau sesuai selera
2 daun bawang 

BUMBU ( BLEND )  
3 kemiri
5 siung bawang merah
3 siung bawang putih
1cm kunyit
1cm jahe
lengkuas ikut selera

CARA:
* Cuci bersih ayam dan dipotong sesuai selera anda.
* Haluskan semua bumbu, hiris rempah daun.
* Panaskan wajan, tumis bumbu yg telah diblend, jahe, lengkuas, kunyit, cabe besar hingga beraroma.  
* Masukan tomat, daun serai, jeruk, pandan kemangi aduk hingga bumbu tercampur rata dan masukan potongan ayam aduk hingga rata dan seterusnya masukan daun bawang. Tambahkan air secukupnya. 
* Biarkan mendidih hingga air menyusut dan masukan garam dan gula ikut selera masing2.
* Bisa nambah kemangi lagi ikut selera anda sebelum angkat.
* Woku Ayam Manado siap disantap.  
* Dgn mengunakan tomat dan cabe hijau, jadi hijau deh masakannya.

Sweet & Sour Chicken Fillets

I wont get bore eating this with a lot of rice, who will? this is too delicious!  I will show you how to get a soft and tender chicken bites after it was fried.


SWEET & SOUR CHICKEN FILLETS
INGREDIENTS:-
2 chicken breast boneless and skinless (cut into bite-size cubes)
Half green bell pepper (seeds removed and cut into squares)
1 red chili ( cut into squares )
1 tomato ( cut into squares )
1 half big onion ( cut into squares )
2 cloves garlic (finely chopped)
2-3 slices of fresh pineapple
Oil for frying

MARINATE CHICKEN:
pinch of salt, pepper
1 egg white

COATING
5tbsp or more for coating

SWEET & SOUR SAUCE
1/4cup tomato ketchup
1/2tsp Lea and Perrins Worcestershire sauce
1tbsp Vinegar to taste
2tbsp sugar to taste
dash of salt to taste
1tbsp oyster sauce
1tsp light soya sauce
4tbsp water
1tbsp corn starch

METHOD
* Cut chicken breast horizontally 3 layers or 2 layers thinly.  Tenderize chicken with a meat hammer lightly.   ( This way you will get a very tender chicken meat after fried )
* Cut chicken meat into bite-size cubes and marinate for 30 minutes.
* Coat chicken, deepfried chicken in hot oil medium fire until golden brown and dish up, set aside.
* Mix in sweet and sour sauce in a small bowl with water and cornstarch, set aside.
* Heat wok, add cooking oil add garlic and onion.  Sauteed until aromatic.  Add in green bell peppers,  red chili, tomato and pineapple mix well
* Stir-fry until fragrance. Add in sweet and sour sauce bring boil and thicken, add in chicken cubes. stir and mix well until all chicken coated with sauce evenly.
* Dish up and serve immediately with steamed white rice.
* Yummy!!

Homemade Chicken Char Siew ( Wok Method )

Homemade Chicken Char Siew wok method is quicker than using oven.  Its kind of a short cut way of cooking char siew taste similar the same.

OOhh...look at that shinning delicious char and glaze on my chicken, its mouth watering, you can't really see much difference either cooked from wok or oven.

HOMEMADE CHICKEN CHAR SIEW
3 chicken breast, boneless
1cup water
cooking oil
1 large cucumber

MARINATE SAUCE
1/2 cup Hoisin Sauce ( Lee Kam Kee Brand )
1/4 cup Honey
1/4 cup light Soya Sauce
2 tbsp Red Food Coloring
1 tbsp Garlic Powder / 3 cloves of finely chopped garlic
1 tbsp Five Spice Powder
dash of salt

For Glaze
1/4 cup Honey / Ready made Char Siu Sauce ( Lee Kam Kee Brand)

Method:-
* Marinate meat overnight or 3 hours.
* Heat wok in medium fire, add cooking oil, add in marinated chicken meat, remaining sauce and add 1cup of water mix well and closed with a lid.
* Let it simmer slowly for few minutes constantly check on water, shall it dry out quickly, add little more water to cook chicken throughly and add seasoning to taste.
* As chicken meat cook quite fast, once sauce almost dry, brush some honey to caramelize and dish up.
* In a serving plate, sliced cucumber, chopped chicken char siew and drizzle with sauce.

Cooked this for the very first time, still need alot of improvement on the rice flavouring as i have so much ingredients not available to cook this dish.  But lucky it turn out so delicious too!! As i need to use up my basmati rice, i have cooked a big portion of rice for maybe 10 people...hahaha....

 These were so delicious....

Salted Egg Yolk Chicken

This is for sure is everyone's favourite dish!! The golden color salted egg yolks chicken, yummy!!



SALTED EGG YOLKS CHICKEN
INGREDIENTS:
4-5 salted egg yolks ( steamed and smashed )
2 chicken boneless breasts ( cubes )
10-15 curry leaves
3 chopped chilies
3 chopped garlic cloves
2tbsp butter

MARINATE CHICKEN & DEEPFRIED
2tbsp light soya sauce
dash of pepper
1 egg white
Potato starch or Corn starch
Oil for deepfried

SEASONING
sugar and salt to taste
chicken granules

METHODS:-
* clean chicken, cut into cubes.  Marinate chicken with 2 tbsp light soya sauce, pepper, 1 egg whites for 10 minutes.  Coat chicken with potato starch or corn flour deepfried in medium fire oil until golden brown dish up and set aside.
* Steamed salted egg yolks until welldone.  Smash with a fork and set aside.
* Heat 2tbsp oil 1tbsp butter, add in smash salted egg yolks, stir fried until foamy, dish up set aside.
* Heat 1tbsp and 2 tbsp butter into hot wok, add in chopped garlic, chilies and curry leaves let it sauteed and mix well, add in cooked salted egg yolks and seasoning.  Add in fried chicken cubes mix well to combine, taste and dish up!
* Served with steamed rice.

Ayam Goreng Indonesia ( Fried Chicken Indonesia Style )

This Ayam Goreng recipe is so simple yet so delicious!! Not only that, this recipe can be transformed into many kind of dishes, like the famous Ayam Penyet ( fried smashed chicken ), Ayam Goreng Sambal Hijau, Ayam Goreng Sambal, Ayam Goreng Kremes or etc. anything condiments you can think of to go with it.



AYAM GORENG INDONESIA
INGREDIENTS:-

3 large Chicken Thighs
3-4 daun salam
2 large lemongrass
3tbsp corriander seeds / ketumber
500ml water

A- INGREDIENTS - FOOD PROCESSOR
3-4 large shallots
3 garlic cloves
1 thumb size tumeric
1 thumb size ginger

SEASONING
Salt to taste
half Gula merah

METHODS:-

* Blend ingredients A set aside.
* heat oil in wok, add ingredients A sauteed til aroma, add in daun salam, lemongrass and corriander seeds mix well, add chicken and seasoning to combine, add water, close with wok lid let it simmer.
* Cook chicken about 20 minutes until chicken no trace of chicken blood, dish up set aside.
* Heat cooking oil, deep-fried chicken in medium fire until golden brown.
* Dish up and served hot with warm steamed rice.

I eat my yummy fried chicken with Padang Sambal Hijau, fried tempe, taufu, daun kemangi and of cos warm steamed rice.....so so yummy!!

Thai Mango Salad Chicken

I know this will sounds weird to you! guess what, im making this Thai Mango Salad without using Fish sauce!! is that weird to you?! haaa..Indeed it would be weird to those who knows the exact ingredient for this dish.  I was actually ran out of fish sauce but i have tones of mango to eat them up. 

Thai Mango dish is one of our favourite, i went on to prepare this this without fish sauce.  I replaced fish sauce with light soya sauce, it taste as good as fish sauce just less of that sharp fish sauce smell in the dish but i guess still taste marvellous to me.  This bowl of mango salad goes with my crispy chicken, so this is a Thai Mango Salad Chicken Dish. 

Mango Salad Ingredients:-
2 half ripe Mangoes
3 parsley
3-4 shallots
2-3 chilies
1 lemongrass
Fish sauce / light soya sauce
Thai chili sauce ( you can omit this if you use fish sauce ) 
2 lime juice / 2tbsp lemon juice
shave about 2tbsp palm sugar to taste ( if not sweet enough, add some brown sugar to taste ) 

* cut all ingredients and seasoning set aside. 


Crispy Chicken

Marinate chicken
salt, peper, cornstarch & egg white 
3tbsp cornstarch for coating

Fried peanuts for topping. 

Deepfried till golden brown. dish up and chopped set aside served with Mango salad on top and sprinkle with chop peanut.

Sticky Char Siew Sauce Grilled Chicken


Ingredients:-
7 pcs mini chicken drumsticks
1tbsp Honey
1tbsp light Soya Sauce
1/2tbs Sesame Oil
2tbsp Char Siew Sauce ( LEE KAM KEE Brand )
1 tbsp Garlic Powder
1/2 tbsp Five Spice Powder

Method:-

Marinate meat overnight or at least few hours.

Prepare a baking pan with a layer of aluminium foil.  brush with cooking oil

Pre-heat Oven 250c.

Place marinated chicken on aluminium tray and bake / grilled for 5 minutes and consistently brush glaze on each chicken with left over marinate sauce.

Brush chicken every 3 minutes or so and turn over chicken every 5 minutes, turn and brush method, until the chicken equally cook through and coated with a shining glaze beautifully.

Cooking time takes up to 30mins or until golden brown, depending on the size of your chicken drumsticks. I used a very tiny mini small drumsticks.

If you want the chicken to left some burn marks at the end, grill/bake longer.



Soooo Yumm!!  I cook it perfectly!

Stir-fried Kung Po Chicken


Ingredients:-
2 chicken boneless / chicken breasts, cut into cubes
5g fresh chili/ dried chili, soak and cut
2-3 stalks of spring onion, cut into 2" lenght
1/2 big onion
1 garlic
fried plain cashewnuts

Marinate Chicken:-
1tbsp light soya sauce
1/2tsp sugar
dash salt
1tbsp cornstarch
1 tbsp Sesame Oil

Sauce:-
Tai Hua Kung Po Sauce ( any brand for Kung Po Sauce )
Sugar & Salt to taste, optional

Method:-

Marinate chicken cubes 15 to 30 minutes with marinate sauce.

Heat wok, 1 1/4 tbsp oil and add in big onion and garlic, till aromatic and in the chicken pieces, cook until golden brown and turn to other side repeatly. and add in spring onion, 6 tbsp Kung Po Sauce, stirfried quickly for 1 to 2 minutes till cooked and to finale taste add some salt or sugar if necessary, optional.

Off fire and add in cashewnuts mix well or dish up garnish with some cashewnuts, either way.

Fried Char Siew Chicken Wings with Sesame Seeds


12.12.2013 - Batam.  Fried Char Siew Chicken wings is my old time favourite at home.  This may sounds weird but the taste, simply delicious.  

My mom used to cook this during special occasion at home.  Now i can cook this any time i like my way.  For this recipe, i sprinkle some sesame seeds to add some color and flavour.  I don't really remember how my mom's marinate the chicken no other than the char siew sauce, but i use my way of marinating this chicken in the simplest way.  Just 3 ingredients and you'll get this full of flavour fried chicken wings.

Marinate Chicken & Method:-
5 large Chicken Wings / 8 Chicken mini drumsticks
1 1/2 tbsp Char Siew Sauce
1tbsp Light Soya Sauce
1 1/2tbsp Honey
1tbs tossed sesame seeds

Marinate Chicken for 2 hours or overnight.  Heat wok and deepfried chicken wings till golden brown and sprinkle some tossed sesame seeds.

Chinese Lemon Chicken Fillets



 Chinese Lemon Chicken

Ingredients:
1 boneless-skinless chicken breasts (cut into 1” cubes)
a slice of lemon & sesame seeds for garnishing

Marinade-
2 tablespoons soy sauce
garlic powder
chicken granules
pepper
½ teaspoon salt
corn starch

Batter-
1 large eggs
¼ cup cornstarch
½ teaspoon baking powder
1 pinch white pepper
oil (for frying)

Sauce-
1/3 cup sugar
1 cup chicken broth (  i use chicken granules )
1 ½ tablespoons cornstarch
2 tablespoons lemon juice ( 1 whole lemon juice )
¾ teaspoon salt
3 slices of lemon and lemon zest
2 tablespoons oil
yellow food coloring (optional)

Method:

Cut the chicken breast meat into bite-size cubes and marinate for 30 minutes.

Mix the batter in a bowl and add the chicken cubes into the batter.

Mix in lemon sauce in a small bowl with seasoning, lemon zest, water & corn sauce set aside.

Heat up cooking oil in a wok and deep fry the chicken cubes. (Shake off the extra batter before frying). Transfer the chicken out on a plate lined with paper towels to soak up the excess oil. Transfer the cooking oil out.

Heat wok, pour in lemon sauce and let it bowl and thicken, taste the gravy and if to sour, could add more sugar or to taste to your own desire. When sauce has thicken, add in chicken cubes into the sauce and toss chicken a few second and dish up and sprinkle with toasted sesame seeds.

Serve immediately with steamed white rice.

Sundanese Ayam Bakar III




Sundanese Ayam Bakar - My M-In Law Recipe. 

Ingredients for Ayam Bakar:- 
4 chicken thigh ( if u use less chcken, reduce the ingredients )
fresh ginger ( about thumb size ) or ginger powder
lengkuas ( double thumb size ) or lengkuas powder
shallots 2pcs ( blend or finely chopped )
garlic 15pcs ( blend or finely chopped )
asam keping 1pc
cenke 5 pcs
kayu manis 1or 2 pcs short
star anise 1pc
serai 1pc
daun salam 3 or 4 pcs
salt
chicken granules
Indonesia kicap manis
cooking margerin

METHOD:-
1) clean the chicken put in a big bowl. Add in blended the garlic and shallots, ginger, lengkuas, asam keping, cengke, kayu manis, star anise, serai and daun salam, add salt & chicken granules all in the bowl and mix well with hand for 5 mins. Keep it marinate for 1 hour or 2.

2) Heat wok or pan, put little bit vegy oil add in marinated chicken. Let it brown from one side and turn to another. until both side are equally brown, make sure chicken skin not to stick on the wok or pan, and add about 2 cups of water and cover with lid, let it cook slowly.

3) about 5 mins turn chicken and cook again few mins until water almost try. andd in kicap manis about 3 tbsp. add little water so as it wont burn continue cooking till the chicken all in black color and water almost dry up. off fire.

4) transfer chicken to a bowl. and with a brush / spoon, in the butter/margerine on the chicken equally for bbq it. Let the chicken sit for 10 mins. and ready to be bbq

5) and the last step is bbq/ open fire grill is the best way to cook this recipe. since the chicken already cooked, the grill process just to make the chicken more aromatic and with nice burn from the grill/bbq. so once it is brown nicely, dish up and served.


SAMBAL ( with food processor ) 

handful of fresh keriting chili, blend
5 shallots, blend
3 garlic, blend
1 big tomato, blend
1pc belachan
2 daun salam, optional
1 lemongrass, optional
salt, sugar, chicken granules to taste

METHOD:-
*Blend chili put aside and blend shallots and garlic together till fine.  
*Heat generous amount of cooking oil or 4 tbsp cooking oil pan, add in lemongrass & daun salam a second or 2, add in blended shallots and garlic sautee till aromatic & in belachan. Add in blended chillies mixed well and stir a few minutes till fragrance. 
*Put seasoning to taste
*Add in blended tomato.  mixed well, stir until well combined.
*Dish up served with Ayam Bakar, Warm Rice & Kemangi.

Sweet and Sour Chicken



Sweet & Sour Chicken
Ingredients:-
2 boneless and skinless chicken breast (cut into bite-size cubes)
1 tablespoon shaoxing wine, optional
1 green bell pepper (seeds removed and cut into squares)
1 tomato ( cut into squares )
1 half big onion ( cut into squares )
2 cloves garlic (finely chopped)
1 slice of fresh pineapple
Oil for frying

Marinate chicken Breast :
pinch of salt, pepper
1 egg white
1tbsp corn flour


Batter:
5 tablespoons all-purpose flour
4 tablespoons corn starch
1/2 cup water
1/2 tsp or pinch of baking soda

OR

Just deepfried chicken which had already marinated with cornstarch, if you wanna use this method, add another 2 tbsp of cornstarch while marinating process.


Sweet and Sour Sauce:
4 tablespoons tomato ketchup
2 tablespoons chili sauce
1 teaspoon plum sauce, optional
1/2 teaspoon Lea and Perrins Worcestershire sauce, optional
Salt, Sugar & Vinegar to taste
1/2 teaspoon oyster sauce
3 tablespoons water
1/2 teaspoon corn starch

Method:

Cut the chicken breast meat into bite-size cubes and marinate for 30 minutes.

Mix the batter in a bowl and add the chicken cubes into the batter.

Mix in sweet and sour sauce in a small bowl with water & corn sauce set aside.

Heat up cooking oil in a wok and deep fry the chicken cubes. (Shake off the extra batter before frying). Transfer the chicken out on a plate lined with paper towels to soak up the excess oil. Transfer the cooking oil out and leave only 2 tablespoons oil in the wok.

Add garlic and saute garlic & big square onion until light brown and then follow by the green bell peppers and tomato squares. Stir-fry until you smell the aroma. Add the sweet and sour sauce into the wok and bring it to boil till thicken. I like a little sauce with rice, if you want a little dry, you could keep stirring until very thick and add in chicken meat.

Toss in the chicken, do a few quick stirs, dish out and serve immediately with steamed white rice.

Crunchy Fried Quaker Oatmeal & Sesame Chicken Fillets

03.11.2013 - Batam.  My son has no appetite, it could be...kid in this age very particular with food. Is like almost 3 months he has been losing appetite and losing weight.  Oh..well, kids love fried food, don't they??! He loves fried chicken and crunchy food too. so i have this idea of making him crunchy and crispy chicken instead of the store bought nuggets.  Nugget is his fav too..maybe time to fried him some good chicken.  i think he has been getting so fad up eating soup everyday! duh...

Anyway, this recipe can be baked if you want a healthier version.  You can served with any sauce you desire.



Ingredients:
Marinate chicken fillets for few hours

4 small chicken breast cut into half,
Pinch of salt, pepper & chicken granules
dash of garlic powder & paprika powder
1 egg white

Coating:
1 cup Quaker Oatmeal
1/4 cup white sesame seeds
Pinch of Salt & Pepper

1. Clean chicken fillets, if the fillet is too thick, you can flatten the chicken by cutting it into half.  Most importantly to tenderize the chicken.  Tenderizing the chicken with the back of the chopper, gently pound them thin or use a meat hammer to do the work.  Just a gentle pound.  This will gives the chicken breast a tender result when it was cooked.  If you do not pound the chicken breast, it will be hard and rubbery when it was cooked. and you don't want that.

2. Marinate the meat with salt, pepper, garlic and paprika for an hour.

3. In the hand mixing blender, blend the quaker oatmeal into fine crumbs. Remove from blender and add in sesame seeds mix well and set it aside.

4. Heat wok with 2 cups of cooking oil with medium heat.  For baking, pre-heat the oven to 200c. Line a baking pan with some aluminum foil. Drizzle it with a bit of olive oil and set it aside.

5. When the chicken fillets are ready to cook.  Coat chicken fillets with the oatmeal & sesame. Line the chicken on the baking pan, drizzle it with a bit of olive oil and bake it for 30 minutes or until golden brown.

6. In the wok, add in chicken fillet and fried till golden brown and dish up.  For baking, bake chicken fillet to 30mins or until golden brown.

7. Serve with your desire sauce.
